Healthy Eating: Sesame broccoli
Steamboat Springs — This recipe will become your family’s favorite way to eat broccoli.
3 cups broccoli florets
2 tablespoons rice vinegar (or 1 1/2 tablespoons white vinegar and 1 teaspoon sugar)
1 tablespoon water
1 teaspoon lemon juice
1/2 teaspoon sesame oil
1/2 teaspoon ground ginger
2 teaspoons sesame seeds, toasted
Place broccoli in a vegetable steamer over boiling water, cover and steam for 6 to 8 minutes or until tender. In a small bowl, combine vinegar, water, lemon juice, sesame oil and ginger. Place the steamed broccoli in a serving dish and toss with the vinegar dressing until coated. Sprinkle with sesame seeds and serve.
Makes 6, 1/2-cup servings
