Healthy Eating: Caprese skewers

Caprese Skewers

Ingredients:
1 container cherry tomatoes

1 container cherry-size Mozzarella Balls*



1-2 bunches fresh basil leaves

¼ cup balsamic glaze



About 5 slices bread (any kind)*

1 teaspoon extra virgin olive oil

Salt/pepper

1 pack party skewers

Directions:

Cut bread into ¼” x ¼” cubes, and toast in the oven at 350 degrees until golden brown. (Optional: toss with ¼ ounce extra virgin olive oil and a pinch of salt before toasting). Wash tomatoes and basil gently in cold water. To assemble, skewer a tomato, mozzarella, a bread cube and a leaf of basil. Repeat as many times as needed for desired portion. Arrange skewers on a serving platter and sprinkle with salt and pepper if desired. Finish by drizzling the balsamic glaze over skewers.

*For a vegan, lactose-free version, substitute firm tofu for the fresh mozzarella.

To make glaze, simmer to reduce ½ cup balsamic vinegar and 1 tablespoon of sugar until thick.

*Feel free to substitute a gluten-free bread; the rest of the recipe is gluten-free.
